yes you are right -- my question is are there any items that are excluded from cash back and is this in addition to the education discount already on Apple Education Store.

Apple has no restrictions on the cash back items that we can give back to you. Just simply follow the link on the deal when you are purchasing and you will be getting your cash back in your studentrate account when you receive your device.
